Boy do I have a good recipe to share with you tonight!
This is one of my new favorites and I plan to make it many more times by years end, like tomorrow for starters. :D You will never want to eat another spinach artichoke dip after you try this one. And, to be clear, don't even think about the calories. You can walk it off another day!
Spinach Artichoke Dip
1/2 # bacon, crumbled
Up to 1/4 cup finely chopped red onion
8 oz chopped artichoke hearts
1 box frozen spinach, thawed and squeezed dry
1 cup whole cream
1/2 cup grated parmesan (the sawdust looking kind)
1/2 cup shredded Italian blend or Mozzarella cheese, plus 1-2 cups more
Buttered dip-dish (I use a 2 quart Pyrex)
Instructions
1. Fry bacon (extra crispy) over medium heat. Remove bacon from pan and cool on paper towels.
2. In the bacon grease, cook onion until translucent. Move it around with a wooden spoon, don't let it burn!
3. Add chopped artichoke hearts and spinach. Let it cook for a few minutes until everything is heated through and the residual moisture is gone from the spinach. Add the bacon. Give it a good stir.
4. Pour the cream slowly in the middle of the pan and fold the ingredients through. Bring to a boil over med-high heat and allow the cream to thicken.
5. Add the Parm and Mozz (or Italian blend) and keep stirring. Cook for an additional 3-5 minutes until nice and creamy.
6. Scrape every delicious morsel into the greased dish and top with 1-2 cups of shredded Italian or Mozzarella.
7. Bake at 350 until cheese is melted and ooey gooey (12-15 minutes.....just keep an eye on it)
Serve with buttery crackers, crispy chips, crusty breads, bread sticks, etc. etc. You know, I haven't found anything that I wouldn't serve it with! You could easily double this and serve in a bigger dish.
