One day Isaac pulled me out of the house to show me that my flowers were poking through the dirt. The little guy was so excited and we had to immediately "feed" them. Of course these flowers are Tulips (that probably won't bloom because I'm a horrible gardener) and the sight of them gave me Dutch fever.
I've been sewing Dutch costumes for the boys and tracked down a dress and shoes for myself so we can participate in the Tulip Festival this year. Many of my food choices have been more traditional, including this all time favorite. Cheese Dried Beef Spread on an open face Rusk Bun will get me racing ever time.
Bonus....when you spread it on so thick and warm it up a little the cheese will slide off the bun onto your plate and then you scrape every last drop with plain potato chips. Finger Licking Amazing!

A word of warning: Do not be cheap- buy the real ingredients, NO SUBSTITUTIONS! This spread is highly addictive and may cause late-night snacking issues.
Ingredients:
1 pound Velveeta
6-10 slices of Dried Beef, shredded or finely chopped
1 cup evaporated milk (another post about how to make your own, coming soon!)
1 egg, beaten
1. Cut Velveeta into 1 inch cubes. Put in a glass microwaveable bowl, add evaporated milk.
2. Microwave in 30 second increments until completely melted. (Just a few minutes)
3. Stir in Dried Beef.
4. In a small bowl, slowly fold together a little cheese mix and the beaten egg. (You're bringing the temperatures closer together so the egg doesn't scramble when you stir it all together!)
5. Stir the egg into the cheese and set aside to cool before refrigerating.
I've frozen this spread without a problem and it seems to last a long time in the fridge, though you don't need to worry about that because you'll be eating it all in no time!
No need to fret if you find yourself without Rusk buns. An open burger bun, slice of bread, bagel, wheat crackers......you'll find something to spread it on.
