French Toast Roll-Ups

It's no secret that we eat a lot of breakfast food for supper at my house. Cheap, easy, and fast are key factors to these meals. This recipe isn't "easy" but it's not complicated and you'll be able to figure it out too. French toast roll-ups are a fun twist on the classic French toast.
 
 
Ingredients:
12+ pieces of white sandwich bread
4 oz. cream cheese, softened/almost melted consistency
2 TBsp sugar
1/2 tsp vanilla
4 eggs
1/4 c. milk
 
Optional: Fruit jam or preserves, peanut butter, apple butter or other spreadable foods to use with or in place of the cream cheese spread. (I made raspberry jam ones and they were delish!)
 


Step 1: Remove the crust from the bread. Use a sawing motion instead of cutting straight down so you don't smash the slices.
 

Step 2: Flatten each slice of bread with a rolling pin (or a clean wine bottle if you don't have a rolling pin)

Step 3: Make the cream cheese filling (cream cheese, sugar, vanilla all stirred together) and spread on each slice of bread.

Step 4: Roll them up!

Step 5: Not pictured- sorry, it was too messy to do this and take pictures at the same time!
Beat eggs and milk in a medium-sized bowl. Dip bread rolls in eggs and place on a hot griddle or frying pan.
 
 
Step 6: Rotate to fry as many "sides" as you can- mine ended up triangular.
 
 

The rest of the supper getting made- scrambled eggs and bacon to go with the fun French Toast Roll-ups.


And don't forget to serve with maple syrup for dipping!
