I found the idea for this recipe online and the picture was enough to convince me to put it on the menu. While my pictures may not show it, these are actually DELICIOUS!
Ingredients:
1 box Manicotti noodles
1 can refried beans
1 pound ground beef, browned
1 package taco seasoning
1 cup sour cream
2/3 cup salsa
1 1/2 cups shredded Cheddar or Colby Jack
Optional Toppings: shredded lettuce, black olives, onion, tomatoes, jalapeños, bell peppers, shredded cheese, sour cream, salsa, hot sauce, crushed nacho chips, cilantro, green onions
Brown ground beef, mix in seasoning, add refried beans. Set aside. Following box instructions, cook manicotti noodles (5 minutes, not the full 7-9) and rinse in cold water. Fill noodles with meat mix using a piping bag, plastic bag with tip cut off, or a small spoon. Place noodles in a greased 9x13. Mix sour cream and salsa together and spread over noodles. Cover with foil and bake at 350 for 30 minutes. Remove foil, cover in cheese and bake another 10-15 minutes until cheese is melted. Serve with your favorite taco toppings and Enjoy!
I used a small spoon to fill the noodles and it sliced through a lot of noodles, so if you're picky about broken noodles you should pipe the meat.

If you have cuts on your fingers, it's a good idea to wear gloves when cutting peppers!
You can't even see the manicotti under all those toppings, but it was there and so tasty.
