Doritos Chicken Casserole

This recipe has been "family approved" and already requested to be made again!

Thanks, Plain Chicken, for sharing! I tweaked to make the recipe fit my family's tastes, but the idea is great!

Sadly, no picture. It wouldn't have done the dish justice anyway. SO DELISH!


Ingredients:

2 chicken breasts, cooked and cubed
1/2 cup (or more) sliced black olives
1 can corn, drained
1 can cheddar cheese soup (or fiesta cheddar soup if you like a little kick)
1 can cream of chicken soup
2/3 cup sour cream
1/4 cup salsa
2 cups shredded cheese (I used a mix of mozzarella and cheddar, but just use whatever you like)
1 bag Doritos or nacho cheese chips (if you're using store brand, just make sure you taste them first! some of them can be kinda funky....)

Grease a 9x13 pan and preheat your oven to 350. Crush your whole bag of chips and lay half down in your pan. In a large bowl mix the chicken, soups, corn, sour cream, salsa, and olives. Spread this mix over the crushed chips and top with cheese and then the rest of the chips. Bake for 30 minutes. Serve with lettuce and salsa and you're set!

This is a meal-in-one and takes care of your veggies and side-salad! Definitely A+ in my books.

And, leftovers are great if you don't mind semi-soggy chips. The flavor remains amazing!
