Strawberry Waffles


Last Summer the husband and I went on a garage sale shopping date. :) Haha, no we were going out for supper and got sidetracked by some garage sales that were going on and just had to make a few pit stops before making it to our final destination.

Anyway, I found a waffle iron. Said waffle iron is awesome. Did you know you can make all sorts of food in them that aren't traditional waffles? My mind is blown.

But my favorite is still The Waffle.

Especially after I realized (not soon enough) that I can make flavored waffles.

I accidently pureed some strawberries (I was going for more of a "smushed" factor but had the blender set a tad too fast.....) a while back and froze them so I could deal with them later.
Deal with them I did!

I added them to my favorite waffle recipe and voila! this is the result.


Ingredients
1 3/4 cup flour
1 TBsp baking powder
2 TBsp sugar
1 3/4 cup milk
1 tsp vanilla
2 eggs, beaten
1/2 cup oil or melted butter (I've used both and like the taste of the butter better but the convenience of the oil wins most of the time)
*1 cup pureed strawberries (or fresh berries cut up really small)

Sift together dry ingredients. In a separate bowl, combine wet ingredients and then add to dry mix. Stir until just moistened. Cook in a greased waffle iron according to your iron settings (and taste preferences).

Serve warm with your favorite toppings; like more strawberries and a dollop of cool whip. Or syrup. Or peanut butter if you're like my family.

These are perfect to freeze with sheets of wax paper between each waffle. Just pop them into the toaster when you want to eat one. LOVE THIS!
