I've eaten this (or something like it) a few times, but never made my own UNTIL NOW. Oh WOW! This may be my new favorite topping/relish/side dish/sweet treat/snack/food!
1 Golden Delicious apple, diced (you want to use an apple that's more mushy than crunchy)
1 1/2 cups diced strawberries
1/3 cup blueberries
1/3 cup raspberries, smushed
2 kiwi, diced/smushed
You can also use pears, blackberries, diced mandarin oranges....just fruit that's not too hard or too mushy.
In a separate bowl mix:
3 TBsp brown sugar
3 TBsp jam/fruit preserves (in the picture shown I mixed 2 TBsp red raspberry jam and 1 TBsp orange preserves)
splash of lemon juice (maybe 1/2 tsp?)
3 TBsp 7-up
Pour over the fruit and toss together.
I started eating it by the spoonful but you can use this to top waffles and pancakes, sugar cookies for a fruit pizza, or eat it like a dip with cinnamon-sugar chips/crackers.
*This freezes pretty good!
