Mmmmmm What a great supper!
*Bonus* leftover-user-uper!
Ingredients:
1 pkg tortilla shells
2 cups shredded beef (levtovers are best!)
8oz tomato sauce
1 pkg Enchillada sauce mix
1/2 cup salsa
2 cups shredded cheddar
Mix the tomato sauce and enchillada sauce mix according to package directions. Add salsa. Pour 1/2 cup sauce mix in beef, stir together. Pour 1/2 cup sauce in bottom of 9x13 dish. Scoop meat onto shells and roll up, place seam side down in dish. Pour remaining sauce over tortilla shells and top with cheese. Bake 20-30 minutes at 350. Serve with your favorite toppings: lettuce, black olives, sour cream, salsa, etc.
