My mom makes these every fall. Multiple times.
We used to fight over the last bar. Mom usually had to hide some slices if she wanted to get a taste.
They're great to share with your neighbors. Or church members. Or strangers for that matter. They'll soon become friends after a taste of these sweet treats.
The last time I made these I fudged the recipe. A little on purpose, a little not on purpose. :S
They still turned out good. No, better than good. They tasted amazing and I couldn't help myself from finishing off the pan.
(Ugh, the scale is not my friend right now. I need to start giving away more of my baked goods! Volunteers?)
Here's the recipe:
2 1/2 cups flour
1 tsp salt
1 cup shortening
1 egg yolk plus 2/3 cup milk (mix together in a measuring cup)
1 cup crushed corn flakes (not super fine, just so they aren't big flakes)
1 cup sugar
1 TBsp flour
1 tsp cinnamon
8-10 sliced apples (I've cubed them before, but sliced is better!)
-this is roughly 5-6 cups worth of apples
Mix flour, salt, shortening, and egg/milk mix to make a dough. Roll out half to 10x15 and place in slightly greased pan. Sprinkle with corn flakes. Mix apples, sugar, cinnamon, and flour together then pour over crust and arrange so they're in an even layer. Roll out other half of dough and cover apples. Pinch seams together as much as you can. (Optional: brush with egg white) Bake 45 minutes at 400.
While the bars are baking, whip up some frosting drizzle.
1 TBsp water
1 cup powdered sugar
1 tsp vanilla
Let the bars cool a little before drizzling with the frosting, but not too long. Then use your finger to clean out the bowl from the frosting.
Everything about these bars is comfort food to me. And there's fruit in it, which means you can substitute any meal for a giant slice of apple pie bar heaven!
