Mexi Hotdish


This is something I made up for supper. It was a huge hit-something I was not expecting!

I was thinking it would taste like most of the mexican-style casseroles that I make-mostly salsa, a little beef and lettuce. Boy, was I in for a treat when this was tasty and had everyone asking for more!

Ingredients:
1 pound ground beef
1/2 cup chopped green peppers
1/3 cup chopped onion
1/2 cup sour cream
1 cup minute rice (I had white and brown)
1/2 can black beans
1/2 can stewed tomatoes
3/4 cup frozen corn
1-2 cups crushes tortilla chips
Lettuce, salsa, black olives, cheese to top

Brown ground beef with onion and green peppers. While the meat is cooking, mix sour cream, rice, tomatoes, beans, and corn. Combine all together and top with crushed chips. Bake at 350 for 15-20 minutes. Top with your favorites and enjoy!
