Chicken Stew

I know it's summer and most days are well over 90 now, but I can't help making a hot stew for supper! It's been ages and I don't feel like waiting 'til November for this one. My family is going to have a cow since we'll be eating this at the campground! hahaha I sure know how to plan 'em!

Anyway, I took care of the chopping days ago and then bagged everything and shoved it in my freezer until it was time to pack the camper. I have the crockpot packed as well as my soup pot if we decide to throw it over the fire pit. Most likely this will be a crockpot meal.

Ingredients
1 1/2 pounds chicken breasts
4 potatoes, cubed
3 carrots, sliced
1 onion, diced
1/2 green pepper, diced
1 cup green beans
1/2 can stewed tomatoes
1 can chicken broth
salt and pepper

Cook chicken, then cut in cubes. Combine all other ingredients. (This is when I bagged and froze everything). Cook in crockpot on low for 6-8 hours or in a 325 oven 3-4 hours until vegetables are tender.

I'm crossing my fingers that this is a good one. It was easy enough to prepare and I would love a new stew recipe to add to my box. :)
