Remember I said I bought some apples? Not only did I make microwave applesauce, but I whipped up an easy batch of apple pie bread.
Ages ago I tried to bake some basic apple bread. It was a flail. (Flop + fail = flail...get it?)
Anyway, thanks to .....PINTEREST..... (of course!) and this recipe I have a new favorite bread recipe! And so do the kids. :)
The flavor in this bread is perfect- the apples are still flavorful and the pecans add that earthiness and make it over the top.
Now, before I go on I will admit to you that I was over-eager and tried to get the bread out of the pan before it was cool enough. Who knows what happens then? Well, you'll see from the picture.
Please believe me when I say this is a delicious bread and you should all go bake it now! Ask Sydney, she'll tell you it's great and she doesn't even like pecans.
Ingredients for my version (tweaked a little from the post I followed):
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
1/3 cup buttermilk
2 tsp baking powder
2 eggs
1/2 tsp vanilla extract
2 cups flour
1/2 tsp cinnamon
dash of salt
3/4 cup peeled, diced apples
1/2 cup chopped pecans
Preheat oven to 350 and grease your bread pan. In a large bowl, mix butter and sugars until creamy. Add buttermilk and baking powder, mix again. Add eggs and vanilla, mix again. Finally add flour, cinnamon and salt. With a big wooden spoon, stir in apples and pecans. Plop into pan and smooth batter evenly in the pan. Bake for an hour until toothpick comes out clean.
Now, the important part that I didn't follow....cool for 15 minutes in pan then remove from pan and cool completely.
I also didn't wait til it cooled to eat it. Sooooooo good warm from the oven! The kids really liked it like that too, except Isaac who kept blowing on it before every bite saying "hot" even when it wasn't...... goofy kid!
