I previously mentioned I have a thing for pie. I also love muffins. They're a quick snack, hardly any clean-up needed and not to mention-- delicious!
Browsing the blogs one day I found a recipe for Pecan Pie Muffins and was immediately in love.
Pecan Pie + Muffins = Love
Yep, love.
I got to work on these as soon as my belly started talking.
I *tweaked* the recipe a tad and it's perfect. Not many of my recipes are perfect, but this one is!
Pecan Pie Muffins
Yield: 12 muffins
1 1/2 cups brown sugar
1 cup flour
Dash of cinnamon
1 cup chopped pecans
3 eggs, beaten
1/2 cup butter, softened
1/2 cup margerine, softened
2 TBsp honey
Combine the dry ingredients. In a separate bowl combine the wet ingredients. Mix all together and fill (2/3 full) greased muffin tins. Bake at 350 for 20-25 minutes-they should be a dark, golden brown-you know, like pecan pie.
These suckers are incredible warm and just as yummy cold. mmmmmm
