Forgive me for the frequent posting... but I have so much to share lately!
Tonight I want to share our supper.
Of course my camera had dead batteries when I went to take a picture of it.... sigh....just take my word that it looked and tasted incredible!
I have yet to name it, so any ideas would be appreciated!
Ingredients:
1 bag Louisa Cheese Tortellini (found in the frozen food section)
1 pound Italian Sausage
1 bunch fresh broccoli
1 stick butter
1 cup whole milk
4 heaping tablespoons flour
1/2 cup Ranch dressing
1-2 cups shredded mozzarella cheese
salt, pepper, garlic salt, parsley flakes
Brown sausage in skillet over medium heat. Cook tortellini according to package directions. Cook broccoli until tender (we like it a little on the "mushy" side to make it easier for the boys to eat). In a medium saucepan, melt butter over medium heat. When melted (and not browned!) add flour. Whisk until thick. Add half of the milk, cheese, Ranch, and seasonings; whisk again until creamy. When cheese is melted, add remaining milk and turn to low heat. When all ingredients are cooked, pour all into one of the pans/bowls and carefully mix together; pour into 9x13 Pyrex. (Make sure you don't break open the tortellini). Bake at 350 for 15 minutes to combine flavors or to melt extra cheese if you happen to throw more on top.
We ate this with cheesy garlic toast and fresh red grapes. It was the most perfect meal tonight!
Side-note: if you are lactose-intolerant like me, take lots of Dairy Ease because you'll pay for this one! :S
