We've had some great Fareway sales in recent months. I went through a week of meal prep and made a bunch of ham balls when their ham loaf was on sale last. This recipe is based on the ones found in the Monica cookbook (I have an old version), and is our favorite.
Glazed Ham Balls
1 pound ham loaf
1 pound ground beef
1 cup bread crumbs
1 cup milk
2 eggs, beaten
Mix together with your hands and form into balls roughly the size of a golf ball. Place in a deep baking dish with space between each meatball.
1 cup brown sugar
1 cup ketchup
1 TBsp vinegar
Mix glaze and spoon over meatballs. Bake 40-50 minutes at 350.
You can also freeze half or whole batches after they're mixed up. I cook them from frozen for 60-70 minutes. If you do this, wait to put on the glaze until halfway through or you'll be scrubbing your pan for hours!
The meal pictured is Ham Balls, boxed rice (Butter & Herb, I think), sliced and cooked carrots, and chopped fruit salad (grapes, apples, strawberries). The kids loved it!
