The boys got a kick out of supper tonight. There were all sorts of comments about getting stuck by porcupine quills, and asking if porcupine comes from pork. You know, PORK-upine? :)
These meatballs were served with garlic & herb roasted potato cubes, broccoli cuts, applesauce, and bread with butter. Nothing super fancy, but definitely home cooked and family focused.
Ingredients:
1 pound ground beef
1/2 pound ground pork sausage
2 eggs
1/2 cup bread crumbs
1/2 cup instant rice
2 tsp Worcestershire sauce
1/2 tsp garlic salt
1/2 tsp dried parsley flakes
salt and pepper
Mix all the ingredients together by hand in a large mixing bowl. Form 1-1 1/2" size balls and place in rows in a 9x13 pan.
For the sauce:
1/2 cup ketchup
2 tsp mustard
1 TBsp grape jelly
few dashes of hot sauce
salt and pepper
Spread the sauce over the meatballs and then bake in a 400 degree oven for 20-25 minutes.
