Easy instructions on how to freeze sweet corn.
Shuck, remove all the hair, and wash your ears of sweet corn. In this batch I had a dozen ears.
Using a serrated knife and a bundt pan, cut all the kernals off the cob. This method works great. Just make sure you don't cut the bundt pan...don't want to ruin it!
Once you have cut all the kernals, put in a kettle with 1/3 cup sugar (per dozen ears), 1 TBsp salt, and 1 cup water. Bring to a boil and cook 5-10 minutes.
Remove from the heat and cool completely on a cookie sheet/bar pan.
Once corn is 100% cooled, transfer to a gallon size freezer bag and lay flat in the freezer.
That's it. Super fast and easy method to save that delicious Iowa sweet corn!
