The last time I went to the local mission store, I got a free Pillsbury cookbook from 2007..... and that made me think of the year 2007 and what I was doing that year. In 2007 I was half-way through college and that summer was one of the best in my entire life. There was a roadtrip across 3 states, my first solo flight to Canada, a cool job at a bank, and too many boys.
This was only 6 years ago, but feels like a lifetime ago! Before I became a wife and mother. I guess that was a differenet life!
Back to that cookbook. I found a recipe for Orange-Mint slush and immediately wanted to make it. My parents had (and still have if anyone is interested!) fresh mint leaves in the garden. I had some frozen juice concentrate in the freezer and everything else is always stocked.

Per my usual style, this recipe has been modified and tweaked to my amazing tastebuds.
Ingredients
1 1/2 cups sugar
3 cups water
1 cup fresh mint leaves
1 can (12 oz) frozen Pineapple-Orange juice concentrate, mostly thawed
1 can (12 oz) frozen Lemonade concentrate, mostly thawed
3 cups water
In a 4-quart saucepan, heat sugar, 3 cups water, and mint leaves to boiling. Reduce heat and simmer 3 minutes. Cool liquid at least 1 hour with the lid on.
Strain leaves and discard. In a nonmetal freezer-safe container, mix liquid, juice concentrates and remaining water. Freeze until slush consistency.
To serve, spoon 2/3 cup slush mix into glass and pour 1/3 cup of your choice of water, club soda, lemonade, vodka (ok, not that much vodka please!) or sparkling water.
This is a perfect, cold drink for hot summer nights.
