Since January is a good time for fresh starts and getting healthy, I'm sharing what we're doing to stay on track with (my) resolutions.
Meal Planning:
I spent an hour one Sunday to browse through my cookbooks and freezers (ugh, yes, plural). I came up with just over 3 weeks of meals that are [mostly] healthy and easy-ish to make.
Day 1: Mexican Hamburger Stew and Homemade Beer Bread
Day 2: Orange Chicken with Veggies and Rice
Day 3: Stroganoff Meatballs with Mashed Potatoes
Day 4: Roast Beef with Potatoes and Carrots-Crockpot
Day 5: Leftovers
Day 6: Chicken Tortilla Soup
Day 7: Bubble Pizza
Day 8: Stuffed Manicotti with Sausage and Garlic Toast
Day 9: Ground Beef Tacos and Apple Slices
Day 10: Ham and Cheese Egg Bake with Bran Muffins
Day 11: Homemade Chicken Pot Pie
Day 12: Leftovers
Day 13: Frozen Pizzas
Day 14: Salmon Patties with French Fries and Cauliflower
Day 15: BLT's
Day 16: Spaghetti with Garlic Toast
Day 17: Hot Ham and Cheese buns
Day 18: BBQ meatballs with Twice Baked Potatoes
Day 19: Leftovers
Day 20: Bacon Ranch Chicken Breasts with Rice
Day 21: Tuna Noodle Casserole
Day 22: Chef Salad
Day 23: Roast Chicken with Potatoes and Carrots
Getting Fit:
I've started taking advantage of the built-in workouts on my treadmill and following some of these workouts. I dread doing them, but love the feeling after it's done. I know it's for the best and I need to keep at it to develop a healthy habit.
My dear husband has also become involved in a Wellness program through work. So, he's doing all this (or will be...... muwah ha ha) right along with me.
Bible Readings:
I think this connects with being a better mom. If I set this a high enough priority and do what I need to do to give myself reminders, then this gets done. My outlook on life is so much better and evidenced in how I act. It's at the top of my to-do list and I've moved my Bible so I see it right away in the morning. I'll be honest and admit that I've still missed a couple days since the 1st of the year, but I double-up and tell myself that everything is still ok.
I hope to keep up with all of these things and make 2013 a "better me" year. Wish me luck!
