Pumpkin Chocolate Chip Muffins
So, so good.
I've already had 2 today.
Are they healthy? Hmm..... there's a cup of vegetables in the mix, so yes, they are indeed healthy and therefore I should not consider them junkfood.
Isaac helped me pour everything from the measuring cups and was so proud to take his first bite! (limited, since he can't have anything orange...that's a whole other story)
Are you ready to make your own?
Ingredients:
2 eggs
1/4 cup vegetable oil
3/4 cup sugar
1 cup pureed pumpkin (I used 1/2 cup pumpkin and 1/2 cup butternut squash-SURPRISE!! It totally works)
1/4 cup water
1-1/2 cups flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp ground cloves
1/2 tsp cinnamon
2/3 cup semisweet chocolate chips
Preheat your oven to 400 (or if you know your oven like I know mine, 390)
Grease your muffin tin.
Mix eggs, oil and sugar. Stir in pumpkin and water.
In a separate bowl, sift together dry ingredients. Stir in chocolate chips and then mix with wet ingredients.
Fill muffin cups 2/3 full and bake 17-23 minutes.
Don't overbake or you'll ruin the pumpkin flavor!
Oh, and do yourself a favor and eat one warm right out of the oven. Mmmmm melty chocolate and warm pumpkin. No need for butter on these bad boys!
