This is such a yummy side-dish and I would definitely recommend it with whatever you're having.

The plus side of this dish is that is uses LEFTOVERS!

I had 2 potatoes worth of leftovers and whipped up 3 more potatoes so I could have enough for my family.
Ingredients:
1 baked potato per person (or smashed or cut up or whatever form you want)
1/2 cup sour cream
1/2 cup milk
4 slices bacon, cooked and crumbled
1/2 cup shredded cheese (I used colby)
1/2 tsp garlic salt
dash of pepper
Smash all the ingredients together until creamy and spread evenly into a greased casserole dish. Bake 20 minutes at 350.
I could totally use some fresh green onions in there. That would be delish.
