I usually make this with Chicken, and that's what the original recipe calls for, but I had a 12 pound turkey to use and you can only eat so much plain turkey before you get sick of it. So, substitute for chicken it is!
My favorite soup is Chicken Tortilla Soup, so I figured I can't go wrong using turkey in that.
Ingredients:
14.5 oz can Chicken broth
10.5 oz can Cheddar Cheese soup
10.5 oz can Fiesta Cheese soup
10.5 oz can Tomato soup
1-2 cups diced, cooked chicken or turkey
1/4 cup salsa
I put all this in the crockpot for 2 hours on low and it was good to go! You can also make it on the stovetop as you just need to heat up everything.
To serve, ladle soup into a bowl, top with sour cream, more salsa, and shredded cheddar. And use tortilla chips to scoop it up and eat. Mmmmm so yummy and perfect for the coming cold days!
