Kendall is big on BEEF, not Turkey or Chicken or Fish or any other meat that's healthier for you. He likes his beef. So, I try to change things up so we're not eating the same meals over and over. How boring!
I found a recipe online for Meatball Sub Casserole and instantly fell in love. I can totally re-make this (in my own way) at home, I thought.
And I did just that.
And it was awesome.
Just ask Kendall. Or the kids. Because every plate was clean before it left the table last night. :)
Ingredients
Meatballs:
1 pound lean ground beef (85% or higher)
1/2 cup bread crumbs
6-8 saltines, crushed
2 eggs
1/3 cup chopped onion
salt, pepper, Italian seasoning, garlic salt
2 TBsp milk
Mix all together and roll into 1" balls. Bake 20-25 minutes in 350 oven on a rimmed baking sheet.
While the meatballs are cooking, slice a loaf of french bread into 1/2" slices and butter/drizzle with EVOO on one side. Line 9x13 baking dish (read: Pyrex in my house!) When the meatballs come out, put the bread in and bake 13-15 minutes-you want it to be really crunchy when it comes out, but not burnt.
Once the bread has toasted, put the meatballs in, pour a jar of spaghetti sauce over the top and bake 20 minutes. Remove from the oven, top with 2 cups shredded mozzarella and bake another 5 minutes.
Super easy, definitely mixin' it up from the usual, and totally worth it!
