I signed up to take an egg bake for our MOPS Christmas party. (Which turned out to be pretty fun!) I didn't want to do a traditional 9x13 ham and cheese eggy dish, so I came up with a dish of my own.
Egg Bake: Muffin Style!
Ingredients:
2 slices bread
12 eggs
1/3 cup diced onion
1/3 cup diced green pepper
1/2 cup diced ham
Directions:
Tear bread into small pieces and place in bottoms of greased muffin cups.
Scramble 1 egg in a bowl and add other ingredients. Pour into muffin cup and repeat for each egg.
Cover and refrigerate overnight so the bread can absorb some of the egg.
Bake uncovered 15-20 minutes at 350 or until the eggs are cooked. (My time was 18 minutes).
Verdict:
Yummy and no extra dirty dishes because they were already in portion size!
Yes, I realize I forgot to rotate my picture......Oh well!
